1/2 Cup Unbleached Flour. 1/4 Cup Chopped Fresh Dill. 1/4 Cup Chopped Fresh Mint. 1/2 Cup Feta Cheese. 1/2 Teaspoon Freshly Ground Pepper. 5 Tablespoons Vegetable Oil. Tzatziki Sauce: 1 Medium English Cucumber (Peeled, Seeded & Grated) 1/2 Cup Plain Greek Yogurt.


Heat up a large cast iron skillet over medium flame and a drop of olive, just enough to coat the bottom and your fritters won't stick. Take a spoonful of the zucchini mixture and add it to the hot skillet. Use the back of the spoon to flatten the patties down to your desired thickness. Repeat the process but make sure to not overcrowd the pan.


In a large bowl, combine the zucchini, spinach, feta, herbs, eggs, scallions, and garlic. Stir to mix well. Then, sprinkle in the flour and baking powder, a bit at a time, until it all is incorporated and holding together. Heat about 1/4 cup olive oil in a skillet over medium heat. Once warmed, drop 3 scoops of batter into the skillet.


Next, mix the shredded and squeezed zucchini with the eggs, scallions, garlic, dill, lemon zest, salt, pepper, flour, and some of the panko. Form the mixture into patties and coat them in the remaining panko. Finally, cook. Pan-fry the fritters in a hot cast-iron skillet until they are crisp and golden brown.


In a large bowl mix flour, Parmesan cheese, egg, paprika and minced garlic. Add in zucchini, corn and a sprinkle of salt and pepper to taste, mixing to combine. Add olive oil to a large skillet and heat over medium-high heat. Once heated, add tablespoons of zucchini mixture into the skillet, making small pancake fritter shapes.


Instructions. Trim and grate 12 ounces zucchini or summer squash on the large holes of a box grater into a colander (about 3 cups). Sprinkle with 1/2 teaspoon of the kosher salt and toss to combine. Let sit in the sink or over a bowl for at least 15 minutes. Meanwhile, prepare the remaining ingredients.
